Oven Cooked Coconut Couscous
Ingredients
- 2 cups of couscous
- 1 tin of coconut milk
- 1/4 cup of chicken stock ( you can use any stock you have available)
- 3 carrots (chopped)
- 3 sprigs of green onions
- 1/4 cup of green beans
- 1/4 cup of red bell pepper
- 1/2 tsp of All purpose curry powder
- Salt to taste
Directions
- Preheat oven to 375 degrees F
- In a casserole dish add the coconut milk and chicken stock
- Add the All purpose curry powder
- Add the salt pinch by pinch until the desired taste is achieved (also remember the taste of the liquid will determine the taste of the dish)
- Add the couscous and stir
- Add the chopped green onions, green beans and red bell pepper Stir
- Then cover and put in the oven for 20 to 25 minutes
