Oven Cooked Coconut Couscous

  • 2 cups of couscous
  • 1 tin of coconut milk
  • 1/4 cup of chicken stock ( you can use any stock you have available)
  • 3 carrots (chopped)
  • 3 sprigs of green onions
  • 1/4 cup of green beans
  • 1/4 cup of red bell pepper
  • 1/2 tsp of All purpose curry powder
  • Salt to taste


  • Preheat oven to 375 degrees F
  • In a casserole dish add the coconut milk and chicken stock
  • Add the All purpose curry powder
  • Add the salt pinch by pinch until the desired taste is achieved (also remember the taste of the liquid will determine the taste of the dish)
  • Add the couscous and stir
  • Add the chopped green onions, green beans and red bell pepper Stir
  • Then cover and put in the oven for 20 to 25 minutes
